Cooking in a camper means cooking with limits: two burners, little cupboard space, and a fridge that can't take much. That sounds hard, but it actually made our food simpler.
We buy whatever the market has that day and only then work out what to make. It saves planning and it's often better.
Food also turned out to be the easiest way to meet people on the road. Asking what something is and how you make it opens doors everywhere. [Add an example of a dish you learned somewhere.]
